We sauteed the freshest seasonal vegetables we can get:
Zucchini, Squash, Red & Green Bell Pepper, Eggplant, Onion (whatever is available).
We season them with Olive Oil, Fresh Lemon Juice, Salt & Pepper…

Cajun Rubbed Alaskan Rockfish
Alaskan Rock-fish is a mild flavored salt-water fish excellent for grilling.
We rub the Rockfish with herbs & spices, giving this dish its distinctive flavor.
Served over a bed of Spinach Rice (Spinach, Carrots, Onion, Celery, Peppers).
Top w/ a lemon-butter sauce.

Fresh Collard Greens
As southern as it gets.
Fresh Collard greens with a healthful twist.
First we cook the greens till soft then season with:
Fresh Lemon Juice, Olive Oil, Romano Cheese, Salt & Pepper.

YUMMUS – THE SOUTHERN HUMMUS:
Hummus is a Mediterranean/Middle Eastern Culinary Classic.
Made with chickpeas (Garbanzo Beans), Olive Oil, Fresh Garlic & Tahini (Sesame Paste).
It is served at room temperature with pita bread chips.
